TRADITION AND INNOVATION
The adventure of French born Annie Féolde and sommelier Giorgio Pinchiorri began in Florence in the early ’70, with appetizers to accompany the wines served by the glass. Today Executive Chef Riccardo Monco and Chef de Cuisine Alessandro Della Tommasina enforce the same philosophy, serving strictly Italian and Tuscan cuisine, inspired by a tradition revisited in a modern key.
