His philosophy goes straight to the mark: every guest is to be treated like a King. His “cloche” shines brightly over a simple steak or over a lobster. With a light and creative hand, Ranza gives life to his menus that decline all the themes of Italian cuisine, with a special propensity for the typical dishes of the Bergamo area in Northern Italy: for example, his famous saffron and chanterelles, pumpkin and zucchini flowers and ”taleggio” cheese “risottos”.
